Stage 4: Cassinel

Milk was another essential product of our villages. To exploit all the milk's potentials it was necessary to be able to preserve it for a long time and to transform it into cream, butter, ricotta, and other cheeses.

The cassinél (a cellar used for the conservation of milk) was a widely used facility. Generally built in a similar way, it was a small stone construction with a barrel vault. Many cassinels were excavated into the ground and usually built close to a source of water. The running water guaranteed freshness to the room and was also used to cool the milk deposited in copper vessels (conghe), which were placed in large but shallow basins placed inside the building. Outside the cassinél, there was usually a small fountain which allowed the drawing of water for household needs or for agricultural purposes. From there the water flowed in simple artificial canals dug into the ground to irrigate the meadows. Near the artificial canals people cultivated willows: their flexible and resistant branches were used to tie vines in the vineyard and used as harnesses for panniers and different kinds of baskets.
