24 December | Christmas Eve, Where Tradition Meets Creativity

The magic of Christmas Eve comes to life around the table, surrounded by a warm atmosphere and delightful flavours. The culinary journey begins with delicate Swiss beef tartare, served with bone marrow and thinly sliced sweet-and-sour shallots, followed by a raviolone with a soft filling of ricotta, spinach and egg yolk. For the main course, choose between charcoal-grilled bonito tuna, enhanced by a delicate chive beurre blanc, or succulent Swiss veal loin in a pistachio crust. To end on a sweet note, a chocolate Bavarian cream infused with evocative notes of Norway spruce, accompanied by traditional panettone and pandoro, bringing back all the warmth of cherished Christmas traditions.

25 December | A Christmas to Savour Slowly

Christmas lunch celebrates the pleasure of coming together over familiar flavours, thoughtfully reimagined with a contemporary touch. From a traditional meat terrine in pastry crust to classic tortelli in clarified consommé and lasagnetta alla Bolognese. The selection also features roasted capon stuffed with black truffle and Bruggli trout fillet, complemented by delicate notes of Norway spruce. To finish on a sweet note, a creation of mandarin, coconut and namelaka, alongside the ever-present traditional panettone and pandoro.
