From La Stala to the Table

For meat lovers: experience first-hand the art of crafting traditional Ticinese luganiga sausage. La Stala Farm will guide you through its animals, traditions and authentic flavours. An experience to enjoy with the whole family.

An authentic experience in the heart of the La Stala farm, where tradition, craftsmanship, and conviviality come together. During this agri-experience, participants get an up-close look at the farm’s reality, the connection between animals, the land, and food quality, and experience firsthand the artisanal art of preparing Ticino-style Luganiga sausage.

The day begins with a welcome moment and a coffee, followed by a guided tour of the farm.
Between production areas, stories of rural life, and attention to environmental respect, participants explore the value of short supply chains and local production.

Next comes the hands-on workshop. With the help of the chef, participants observe the preparation of Luganiga: selecting the meat, choosing spices, and using traditional mixing and stuffing techniques are the key elements of the experience.

The day concludes with a convivial lunch or dinner, prepared with fresh, farm-produced ingredients, where the products made during the workshop are tasted. A moment of sharing that highlights simplicity and quality.
